Wood has some advantages over plastic when it comes to boards as in that it is somewhat self-healing; shallow cuts in the wood will close up on their own. Beech is tightly grained wood and small pores are best for wooden cutting boards. Good hardness and tight grain help reduce scoring of the cutting surface and absorption of liquid and dirt into the surface. Wood possesses anti-microbial properties. In reality this means that bacteria is drawn into wood through capillary action. Once inside the wood, the bacteria can't reproduce and dies.

To prepare the board for use it is advisable to wipe the surface with a mineral oil, this will additional protection. To clean simply wipe with a damp cloth. Please do not soak the boards. To remove those dreaded meat and veg stains put some lemon juice on the board and rub some rock salt against the wood to clean. This will remove stains and any odours. From time to time is advisable to lighlty sand and then treat the board with another light coating of oil.
